Baked Mediterranean Pollock

Ingredients (for 1 serving):

  • Fish fillet (pollock) — 300 g
  • Olive oil — 3 tbsp.
  • Onion — 1 pc.
  • Garlic — 2 cloves
  • Capers — 4 tbsp.
  • Tomatoes — 2 pcs. (or cherry tomatoes — 10-12 pcs.)
  • Dried oregano — 2 tsp.
  • Pitted olives
  • Pepper — 1 pc.
  • Parsley
  • A wedge of lemon

Cooking process:

  • Finely chop the pollock fillet and greens, add the yolk and wheat flour, mix well and add a little salt.
  • Preheat the oven to 180°C. Form two cutlets, place on a baking sheet greased with oil and bake for 12 minutes.
  • Place on a plate, sprinkle with greens, serve with spaghetti or mashed potatoes.
